Brasa del Valle
Jaime Galindo’s Brasa del Valle lies in the middle of the Valle de Guadalupe, offering panoramic views of the area’s vineyards and mountains. The shady outdoor patio is a terrific respite during hot Valle summers for sipping house Chardonnay, enjoying raw tapas or indulging in a plate of cooked meat from their Santa Maria grill. The quail gets a lot of smoke from the grill hence its satisfying taste of mesquite. Quail can be served a bit rare for my taste, but chef Galindo's is cooked through yet still mouthwateringly moist. The side of carrot purée provides a sweet counterpoint to the earthiness of the diced beets.
